About this book

To Eat explores the journey food takes from garden to table. The book celebrates shared life, showcases a distinctive garden, and serves as a guide for cooks and gardeners interested in farm-to-table living. In 1974, Joe Eck and Wayne Winterrowd relocated from Boston to southern Vermont and took over a twenty-eight-acre property that was forested, overgrown, and wild. Over time, they cultivated seven acres at North Hill into an internationally recognized garden open to visitors during warmer months. Their previous gardening books—A Year at North Hill, Living Seasonally, and Our Life in Gardens—received acclaim, including coverage in The New York Times. To Eat includes recipes from chef and restaurateur Beatrice Tosti di Valminuta and illustrations by longtime collaborator Bobbi Angell. Winterrowd passed away in 2010 while the book was in progress. The work combines informative and personal content, featuring anecdotes, recipes, plant histories, and observations about cultivating food.
